So for St. Patrick's day I was in a very creative mood, and decided to make green cupcakes in honor of the day, so they were not only green but they were so pretty and yummy, I made some Vanilla Cupcakes with a Coconut Cream frosting, and of course I had to dye them green; then I made some Mint Chocolate Cupcakes with Mint Buttercream frosting and drizzled with chocolate ganache topped with an inverted mint chocolate kiss, very minty and very refreshing; even my hubby to doesn't like mint chocolate loved them, and couldn't stop eating them, lol!!

So I've been very behind on my posts, but i have lots of yummy pics of all the yummy stuff I have been making, starting since Valentine's Day!! I made the most delicious double chocolate mini cupcakes, they were so cute and yummy;

then I made some tapas style food, I put a Salsa Romesco Dip, with Smoky Cheese Sticks, and some Crostini Bread; I also made some Shrimp Cocktail puffs, and some Spicy Shrimp Bruschetta and some Chocolate Cups filled with Lime Mousse and a fresh Raspberry on top, so simple and so easy, and most of all so tasty!!!

So I know I haven't been posting lately but I've been kinda busy! Very exciting, I've been experimenting baking cakes with liquor and my first one so far was a great success!! It was a rum cake and I'll post the pic later!!

Well my Blueberry Coffee Cake turned out bad, so bad that I can't bare put a picture of it here!!!! So until it doesn't come out like I want it to I'm not going to put a picture of it!!! I'm so bummed out about, but I have to keep trying!!! Today I'm going to make Spiced Winter Fruit If it turns out nice I will post the results!!! ( Keeping my fingers crossed)

This is another of my creations, Puff Pastry Tartelettes with Basil Pesto, that I made for my hubby and me on one of our many date night ;), it turned out really good, I was very surprised with the results specially since it was my first time making pesto, and I had a few issues along the way but it turned out very good in the end!!!

Today I'm going to attempt making Fresh Blueberry Coffee Cake, I'm keeping my fingers crossed that it comes out good, I will put the results later. You see cakes and breads are not really my strong point but I'm getting there.

What I love to make, as you can see in my previous pictures, is appetizers and anything else that is tiny or small like cookies and cupcakes. Of course I can't keep my husband full on just appetizers and cookies and cupcakes, so I just leave these for the weekends when I can experiment with all the ideas that have been brewing in my head for the whole week and call it a date night.

As you will see in my posts I will probably mention date night a million times, so I'll explain, when my hubby and I were dating we used to go to little restaurant that all they served was appetizers, cheese plates and wines, it was kind of a tapas restaurant, but that restaurant is in my country, so when we got married and moved back to the US, we started restaurant hopping, to see if we could find a replacement for the little tapas restaurant we longed for, and it's been three years and we still long for it, so to make a long story short, we never found a restaurant to replace the one we left back in my country, so I decided to create my own version of the little appetizers and tapas we used to order on our dates, and that's how I started inventing and trying to recreate all the food that has inspired me.

 I'm so excited!!! I finally have a place where I can write about what I love the most, and there's nothing that I love more than cooking!!! Whenever I'm in the kitchen I'm the happiest woman on earth, and if you ask anyone who knows me they're gonna probably tell you that not only do I love it, but that I'm obsessed with it.

 A lot of people including some in my family don't understand the passion I have and feel when it comes to cooking, they just think its something I'm doing 'cause I'm still kind of a newly wed, but that I will grow out of one day, hopefully sooner than later.... Oh well, as my darling hubby tells me, "their loss for not getting you honey".....

When I'm cooking, I feel like an artist, even though I'm not even close to one, I just love reading cookbooks and then trying out the recipes and adding to them my own unique flair to make them my own.

This is Thai inspired spicy shrimp in mini won ton cups.

This is one of my many creations, but after the Holidays I've been kinda slacking, so I have made a resolution that I've done enough slacking and Saturday I start making new stuff again. I will gradually be uploading more of my past creations, I gotta thank my hubby for the amazing pictures he takes of my food!!
